Its velvety texture melts slowly in the mouth. Intense aroma and unique flavour; a unique, balanced combination of salty and sweet, with lots of small nuances as a result of the breed, fresh pastures and acorns. Made using the hind legs from a breed of Spanish pigs that freely roam the fields of Extremadura with a diet based on natural fruits. The peculiarity of these pigs is that the unsaturated fatty acids of the acorns infiltrate between the muscle fibres and in conjunction with the drying and transpiration make them have that unique flavour and juiciness. Their preparation is completely artisan using sea salt and a lot of love in the curing cellar. When cut, its colour varies from bright red to dark red, where we can see numerous veins of fat that give it that flavour and aroma that characterises it.
TIPS: It is advisable to keep it in a cool, dry place protected from sunlight. Remove the packaging and place it on a ham stand or hang so that the piece can transpire. The outer surface of the piece should be removed, and it is best to eat the product in slices at room temperature.
